Ora King Salmon - New Zealand
Ōra King has been perfecting sustainable husbandry practices and breeding expertise for a quarter of a century. Through New Zealand King Salmon’s program they have created a unique breed, called Ōra King, genetically distinct from any other King salmon found in New Zealand or the world. Ōra King is to Salmon as Wagyu is to Beef. The naturally high oil content in Ōra King salmon can be seen in the striking marbled fat lines within the bright orange flesh, instantly drawing comparison to Wagyu.
Barramundi - Remote Northern Territory
Humpty Doo Barramundi is a 100% Australian family owned and operated farm located halfway between Darwin and Kakadu National Park. Since 1993 they have nurtured the premium saltwater Barramundi on their family farm alongside the majestic Adelaide River in Australia's remote Northern Territory - the spiritual home of the Barramundi. They aim to be Australia’s best provider of beautiful Barramundi with a passion to always do better while demonstrating their genuine care for and commitment to our people, environment and partners. They pride themselves on rigorous environmental systems, reducing water discharge to almost nil through our award-winning saltwater wetland system. The wetland system uses natural grasses to clean the water for recirculation through the farm, delivering optimum quality water for high quality Barramundi while protecting the unique environment around them.
Rainbow Trout - Goulburn River
Goulburn River Trout is based near Alexandra in the foothills of the Victorian Alps in north east Victoria, Australia. The family-owned company has two farming sites and a centralised processing plant. Goulburn River Trout is an integrated business responsible for its own trout breeding, grow-out, processing and distribution. A wide range of trout products are produced by Goulburn River Trout, from fresh whole trout through to smoked trout fillets.The business commenced operations in the 1970s and owes it success to the excellent water quality sourced from the Goulburn River, below Lake Eildon. The regulated flows from Lake Eildon provide a year round supply of fresh, cold, clear water – ideal for growing trout.
Eel - Western Victoria
Wild caught eel (kuyang, burra, in indigenous languages) are short-finned eels and are sourced from the rivers of Western Victoria in the traditional areas historically farmed and managed by Indigenous clans. Eel have been a traditional foodsource for indigenous pople around the world and are the largest migrating animal in the world. Our smoked eel is seasonal as eel hibernate and migrate in the winter months and 'disappear' once water temperatures drop below 10 degrees.
